In this workshop you will learn how "fermented" tea is made and how you can make your own from locally foraged leaves. I put "fermented" in quotes because strictly speaking it's an oxidization process and not microbial activity, but that's the term used for describing the process. The workshop will start with a short talk about the process and then we will go out and try find leaves we can use to make our own teas. The leaves will have to sit for 2-3 days and then we stop the process and the tea is finished.
